Issue Eleven

 
    Progression is what life is about.  Passion drives it.  Integrity will sustain it.

    Daniel Boulud sent this letter:

    Dear Mark,
    The evening you spent in the sky box seemed like so many months ago, until it all came back to me with the arrival of
your beautiful magazine.
    I admit I have appeared in a magazine or two in my many years as a chef, but the profile in Traffic stands above anything I have had the privilege off collaborating on in the past.  I so admire the way your wonderful friend writer, Keith Frome, filtered his impressions through his very erudite mind.  And while I appreciated he spirit of the scribe, my eye is drawn again and again to the photos and to the way in which you captured the spontaneous spurts of energy that carry us on a wave throughout the evening.
    I was honored to have our simple act of cooking treated with such poetry and nobility in the pages of Traffic East. 
    You will always have a special place in my kitchen.
